I learnt this question deeply. For civilian 5.56 AR-15 rifles, the optimal twist rate is typically 1:8. This fast twist rate is ideal for shooting the heaviest bullets available in a semi-automatic setting.
The military chose a 1:7 twist rate for the M856/L110 tracer for extreme cold weather shooting out of short-barreled rifles. Additionally, a 1:7 twist rate is suitable for stabilizing 85gr+ LR match bullets used in cartridges like .224 Valk, but these cannot be shot semi-automatically in the AR15/5.56 due to the ogive being below the case mouth at max OAL.
While there can be some really accurate 1:7 twist barrels, in general, they may be about 10% less accurate than an identical 1:8 twist barrel, assuming all other factors are the same. Ultimately, the choice of twist rate will depend on your specific needs and preferences.
